Bob’s Dutch Baby

Yield: 4 servings

Ingredients

  • 3 eggs
  • 1⁄2 cup flour
  • 1⁄2 cup milk
  • 1 tablespoon sugar
  • 3⁄4 cup butter, divided 1⁄4 cup and 1⁄2 cup
  • 1⁄2 cup sugar
  • 1 1⁄2 teaspoon cinnamon
  • 2 tablespoons molasses
  • 1 cup powdered sugar
  • 2 tablespoons half-and-half

Directions

Preheat oven to 425° F

In a large bowl whisk together the 3 eggs, 1⁄2 cup of flour, 1⁄2 cup of milk, and 1 tablespoon of sugar. Mix until smooth. This is your batter.

In a small bowl combine the 1⁄4 cup of butter, the 1⁄4 cup of sugar, the 1 1⁄2 teaspoons of cinnamon, and the 2 tablespoons of molasses. Mix well and add to piping bag. This is the cinnamon swirl.

In another bowl combine the 1 cup of powdered sugar with the 2 tablespoons of half-and-half, add more of one or the other to create a drizzle like consistency, thicker than milk but thinner than molasses. This is the drizzle topping.

On the stove top in an oven safe pan melt the remaining 1⁄2 cup of butter over medium-high heat until it starts to foam. Pour in the batter, then add the cinnamon swirl with the piping bag.

Place in preheated oven for 20 minutes, then lower the temperature to 350° F and cook for an additional 5 minutes.

Remove from oven and add drizzle topping while the Dutch Baby is still hot.
