Spanish Rice

Yield: 6 servings


First list of Ingredients:

  • 2 tablespoons oil
  • 2 tablespoons chopped onion
  • 1 1/2 cups uncooked white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa


Heat 2 tablespoons of oil in a medium sized pan over medium high heat. Stir in 2 tablespoons of chopped onion and cook until tender, about 5 minutes.

Mix in 1 1/2 cups of rice stirring often. When the rice starts to brown stir in the 2 cups of chicken broth and salsa, keep on medium high heat until the mixture begins to boil. Reduce heat to low, cover and simmer 20 minutes. DON’T CHECK IT.

If there is still standing liquid let it cook another 5 minutes.
