Pork Shigureni

Ingredients

First list of Ingredients:

  • 1 lb pork
  • 30 g ginger root (pickled ginger works)
  • 1 cup water
  • 4 Tblsp soy sauce
  • 3 Tblsp sugar
  • 1 Tblsp Sake
  • 1 Tblsp Mirin

Directions

Prep the 1 pound of pork by cutting it into thin strips.

Add 1 cup water, 30 grams of ginger, 4 tablespoons soy sauce, 3 tablespoons of sugar, 1 tablespoon of sake and 1 tablespoon of mirin in a medium size sauce pan set on high, bring it to a boil and then reduce heat to medium high before adding the pork. Make sure to stir in the pork so that it doesn’t stick together.

Let the pork cook uncovered, stirring occasionally, until the sauce reduces. You will have to stir more and more as the sauce thickens. Once the sauce is reduced enough to stick to the pork without leaving much of any sauce in the pan, remove from heat and plate, allowing for the pork to cool before serving.
