Yield: 4 servings
- 1 cup rice
- 2 tablespoons Lime juice (half a lime juiced)
- 2 cups water
- 1 teaspoon salt
- 3 tablespoons cilantro, chopped
- 3 teaspoons vegetable oil
Don’t forget to wash the 1 cup of rice.
In a small/medium sized pan add the rice, 2 cups of water, 1 teaspoon of oil and 1 teaspoon of salt.
Put burner on high and bring water to a rolling boil, then turn burner down to low and cover pot for 20 minutes. Remove from heat and let set for about 5 minutes.
In a medium sized bowl combine the cooked rice, 3 tablespoons of chopped cilantro, 2 tablespoons of lime juice and 2 teaspoons of vegetable oil and toss until mixed through.
