Fajita Chicken Pan Bake

Serves 6


  • 2 boneless skinless chicken breast
  • Taco Seasoning (see below list)
  • 1 teaspoon Minced garlic
  • 1 tablespoon Olive oil
  • 1 fresh lime juiced (about 1/4 cup)
  • 1 Red onion
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Yellow bell pepper, sliced

Taco Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


In a large bowl make a marinade using the taco seasoning, olive oil and lime juice. Toss chicken and vegetables in marinade and allow to marinate, covered for at least 1 hour.

Preheat oven to 375°F.

Spread ingredients across oven safe pan and bake for 15 minutes, or until meat is cooked through. If you want to add some char to meat and veggies, broil for another 3 minutes.

Can serve on tortillas or make into a bowl by adding cilantro lime rice, beans, guacamole, sour cream and salsa.
